Pinot Noir 2006

Wine Notes
Pinot Noir grapes were harvested from Bendigo in Central Otago. Here, hard slate soils surrounding the old gold fields of Otago offer little fertility and good heat retention for grape vines growing along the hills. Ripe black cherry with mineral notes become evident on the aroma, while sweet cherry and raspberry fruit on the palate are well-balanced with influences of mountain herbs and spicy oak notes.

Foodmatch
This silky Pinot Noir pairs well with roasted pork and game and savoury mushroom and veal dishes.

Viticulture
The Pinot Noir vineyard is located on the gentle slopes beside Lake Dunstan in the Bendigo sub-region of Central Otago. A mixture of clones (667, 777 and 15) creates extra complexity and depth. Pinot Noir from this cool climate region shows concentrated fruit with good structure and firm tannins along with hints of wild thyme, which grows in abundance near the vineyards.

Cellaring Potential
Drink now or cellar until 2010.

Winemaking
De-stemmed fruit was fermented in open tanks and hand plunged four times daily during peak fermentation. The wine was pressed off skins after three weeks of maceration and transferred to French oak barriques for malolactic fermentation. The wine was racked once and taken to bottle after nine months in barrel.
