Cabernet Sauvignon 2005

Wine Notes
Concentrated cassis, black currant and cedar notes are present in the aroma of this Cabernet Sauvignon. A classic cool climate Cabernet Sauvignon with great varietal characters, this wine shows lots of depth and sweet berry fruit. A long, velvet palate of blackberry and black currants leads to a well-rounded finish of red fruits and chocolate notes. Bright acidity accentuates the ripe berry fruits whilst firm, silky tannins and toasty oak create a long, lasting finish.

Foodmatch
This full flavoured red matches perfectly with barbecued red meats, beef dishes and casseroles and the strong flavours of hard cheeses such as cheddar and parmesan.

Viticulture
Cabernet Sauvignon is grown on the most gravelly soils of the Paritua Vineyard estate. We create intense ripe Cabernet using tight vine management on a VSP growing system and light cropping levels.

Cellaring Potential
Best drinking 2007 and onwards; however, bottle-aging, will add complexity and character to this already approachable wine up to 2013.

Winemaking
Cabernet Sauvignon fruit from various parts of the Paritua vineyard are fermented in small batches, giving the wine its unique flavours. After ferment, this wine was aged in French oak barriques for 16 months. The Cabernet Sauvignon was blended with 10% of Merlot to create a more elegant wine. Light fining and filtration takes place before bottling.
