Pinot Noir 2007

Tasting Notes 
Intensely flavoured Pinot Noir sourced from three grape growing districts within Central Otago, New Zealand. Ripe raspberry, cherry and plum aromas grace the bouquet, with hints of violets and Turkish Delight giving extra depth of character. The dry conditions of the Cromwell Basin encourage nuances of thyme on the nose whilst the palate is enriched with characters of wild herbs. With a soft lengthy palate and a fine grained tannin structure, this wine is a perfect match to lamb and game meats, pork tenderloin or fresh tuna. Enjoy a bottle now or cellar for up to six years. 
 

Viticulture   

The Pinot Noir grapes selected to create this wine were grown in the Lowburn region, overlooking Lake Dunstan. With its gentle slope and excellent sun exposure, this site is perfectly suited to growing Pinot Noir. To add complexity, two additional locations were utilized for their unique flavour profiles: Alexandra and Gibbston Valley. All fruit was hand-harvested at optimal physiological ripeness allowing for great fruit expression in the wine.

Winemaking
To achieve a wine that is a true expression of terroir the grapes must be allowed to speak for themselves. Hand-harvested and then transferred to the winery in Cromwell, the grapes were destemmed and partially crushed. After a period of cold soaking, the ferment was allowed to start naturally. The fermentation cap was managed with a combination of hand plunging and gentle pump-overs, allowing for the full extraction of ripe tannins. After 21 days of skin contact the wine was pressed and transferred to barrel, where malolactic conversion took place. The wine was matured in oak for 10 months and received a light egg white fining prior to bottling in February of 2008.
