Pinot Noir 2007

Wine Notes

Pinot Noir grapes were harvested from the Cromwell Basin in Central Otago.
The hard slate soils surrounding the old goldfi elds of Otago offer little fertility and
good heat retention for grape vines growing along the hills. Ripe black cherry with
mineral notes become evident on the aroma, while sweet cherry and raspberry
fruit on the palate are well-balanced with infl uences of mountain herbs and spicy
oak notes.

Foodmatch

From slow roasted lamb to Asian inspired duck or Mediterranean wild mushroom
risotto, this silky Pinot Noir is perfectly at home.

Viticulture

Pinot Noir grapes were sourced from two vineyards in the Lowburn sub-region
of the Cromwell Basin in Central Otago, each representing a specifi c fl avour
component. The 2007 vintage was low cropping and produced small berries from
a dry, hot season.

Cellaring Potential

Great drinking from late 2008 through 2012.

Winemaking

Hand-harvested fruit was partially destemmed and crushed to open fermenters.
After a cold soak for eight days, fermentation with natural yeasts and cap
management of two daily punch downs, the wine was pressed and transferred
to French oak barriques (33% new) for malolactic conversion and maturation.
Bottling took place in February 2008.
