Wine Notes
This blended red is a prime example of the exquisite style produced from the stony soils of Hawkes Bay. Intense blackberry and blackcurrant aromas with hints of truffle and cedary notes. The palate shows blackberry, plum and cassis supported by firm but approachable ripe tannins. The oak influence is subtle and provides spicy notes and great structure. 2007 was a stunning vintage for Hawkes Bay, and our classic Bordeaux varieties excelled beyond all expectations. Open bunches with small berries ensured great fruit concentration and firm tannins.

Foodmatch
Excellent with full flavoured dishes such as fillet of beef, roast rump of lamb or fi ne cheeses like aged cheddar or gouda.

Viticulture
The red varieties used in the Stone Paddock Scarlet wine are planted on stony soils in the Triangle region of Hawkes Bay. The vines are managed with open canopy to provide good airflow and exposure to sunlight. All canopy is single cordon spur pruned.

Cellaring Potential
Ideal drinking from late 2008 through 2015.

Winemaking
All fruit is destemmed to closed fermenters. Some cold soaking takes place before ferment and fermentation is for approximately 10 days with 4 daily pumpovers to optimize extraction. Blending of the four varietals in the wine is done before bottling, which took place in June 2008 after a light filtration.
