Tasting Notes
An elegant and mouth watering Riesling from the deep south of New Zealand. Mineral notes and rose petal nuances are underscored with hints of thyme and sage, the classic Central Otago mountain herbs. The palate is soft, refreshing and delicious, with lovely mango sweetness and a pinch of melon and grapefruit on the finish. A wonderful aperitif, or a great match with Thai/Vietnamese-inspired salads, fresh fish or oysters. Fine drinking now, or cellar for up to five years.

Viticulture
This Riesling is grown near Lake Dunstan in the Cromwell basin of Central Otago. The vineyard overlooks the lake and its gentle slope provides good sun exposure and airflow. The soils in the vineyard are all free-draining, old glacial outwash, a layer of topsoil with loamy earth, sand, shingle and clay. The Central Otago climate, with its cool nights and hot days, inspires good natural acidity and mineral flavours in the fruit. Post-veraison work consists mostly of manual leaf plucking.

Winemaking
All fruit is hand harvested and whole bunch pressed at the winery in Central Otago. By harvest date the local conditions are already very cool and processing is therefore at low temperatures. The juice is racked after 24 hours of cold settling and fermented with natural yeast. Fermentation temperatures are kept below 16°C (61°F) and the ferment is stopped to allow for residual sweetness. The wine is then left on yeast lees for about two months post-ferment. Bottling took place in September 2007 after a light fining and filtration.
