 Tasting Notes
A truly luscious wine with heady aromas of sweet apricot, orange marmalade and pawpaw, ‘Dinah’ is an exotic and masterful combination of ‘noble’ grapes and skilful winemaking. The palate is soft and lingering, with sweet honeyed stone fruit and mandarin flavours. With a gentle yet concentrated sweetness, ‘Dinah’ is the perfect accompaniment to lemon meringue pie, coconut flan and vanilla pannacotta. Equally enjoyed on its own, this wine will also pair well with fine cheeses. Enjoy now, or cellar for several years.

Viticulture
Semillon is planted towards the high end of the Paritua Vineyard estate. A rigorous canopy management plan ensures that the grapes achieve full ripeness before botrytis sets in. Bunches are hand selected to ensure they are perfectly botrytised and an additional hand sorting takes place in the vineyard to eliminate any poor quality fruit. The 2008 ‘Dinah’ was harvested in early May after a period of warm weather and heavy morning dew.

Winemaking
Botrytised grapes were processed to press and left to soak. After a long pressing process the resulting juice was treated with great care during the settling phase, which took several days, to prevent oxidation. Fermentation occurred in barrel under ideal temperature conditions to reach approximately 11.5% alcohol, at which point the ferment naturally stops. The wine was then fined and filtered before bottling in November 2008.
